Shepherd Pie, Zero Failure Recipe!! 牧羊人派,零失败食谱!!

INGREDIENTS 材料

Mashed Potato 马铃薯泥
  • 6 russet potato, peeled cut into 2cm cube马铃薯块状
  • 130g butter牛油
  • 3 tbsp milk 鲜奶
  • ¾ tsp salt (to add in mashed potato)
  • Black pepper to taste

Mutton Filling 羊肉馅料

  • 2 tbsp olive oil 橄榄油
  • 1 large carrot, grated萝卜丝
  • 1 large onion, diced 洋葱丁状
  • 4 cloves minced garlic 蒜末
  • 300g minced mutton 羊肉碎
  • 2.5tsp dried rosemary 干迷迭香
  • ¾ tsp salt
  • Black pepper to taste 黑胡椒适量
  • Worcestershire Sauce (several splashes)
  • 1 can tomato paste (best to use Hunts brand, with herbs)番茄膏
  • 1 can chicken stock/water (use the can of tomato paste)鸡汤
  • Parmesan cheese 
 


PREPARATION 做法



Mashed potato马铃薯泥


Add salt into boiling water and boil the potato cube until it’s soft
将盐加入沸水中,倒入马铃薯块煮至软



Remove the potato cubes from boiling water. Add butter into the potato and mash it while it’s still hot so that the butter will be melted.
拿出马铃薯,将牛油加入马铃薯块中,趁热将马铃薯块捣烂成泥,这样牛油会融化。

Add milk, salt and pepper into mashed potato and mix well. Set aside.
加入鲜奶,盐和黑胡椒,搅拌均匀。放在一旁待用。




Mutton Filling馅料


Preheat the oven at 200oC
预热烤箱至200oC


Marinate the mutton with salt, pepper and half of the rosemary for 15 to 20 minutes.
将盐,黑胡椒和一半分量的迷迭香加入羊肉中,腌制15-20分钟


Add 1 tbsp olive oil to a hot skillet, add in onion and stir-fry.
1汤匙的橄榄油入热锅里,加入洋葱翻炒


Add minced garlic into the skillet  when the onion turns transparent.
炒至洋葱便透明后,加入蒜末,继续翻炒。


Add grated carrot when the onion and garlic are stir-fried to fragrant.
炒香蒜米和洋葱后,加入萝卜丝,继续翻炒。


When the carrot is almost cooked, remove them from the skillet
待萝卜丝炒软后,将它们倒入干净的碗内。


Add another 1 tablespoon into the skillet and heat it up
1汤匙的橄榄油入热锅里


Add in minced mutton and stir-fry it until it’s brown.
倒入羊肉碎,翻炒至金黄色。


Add rosemary and continue stir frying
加入迷迭香,继续翻炒至香味出来


Add the stir-fried onion, garlic, carrot, stir a little longer.
加入炒好的洋葱、蒜米和萝卜丝,翻炒一下。


Add worchestershire sauce and tomato paste
倒入worchestershire sauce 和番茄膏,拌匀


Add chicken stock or water and cook for 3 minutes
加入高汤或水,小火煮约3分钟。


Scoop the meat mixture into the a deep casserole or aluminium foil tray
将羊肉馅倒入烤盘或铝箔纸烤盘


Spread the mash over the top.
将准备好的马铃薯泥铺在羊肉馅表面


The portion of this recipe is sufficient to make a big and a small tray of shepherd pie.
这个食谱的分量可以做一大一小的牧羊人派。

Sprinkle a generous portion of Parmesan cheese over the top. I’m trying Parmesan cheese and mozerella cheese.
撒上parmesan cheese,我这次用的是parmesan cheese mozarella cheese


Bake it at 200oC for 18 to 20 minutes to brown the cheese and set the pie.
放入烤箱内烤1820分钟,至表面的cheese变金黄或有一点焦的颜色。
